Jeff Beck- Blow by Blow (or maybe it's jazz... but it's great either way)
Deep Purple- Machine Head
Dire Straits- Brothers in Arms
Bob Dylan- Blonde on Blonde
Billy Joel- The Stranger (52nd Street good also)
Elton John- Madman Across the Water (any of them, actually)
James Taylor- JT
Steely Dan- Gaucho
The Who- Live at the Royal Albert Hall

All of these see rotation in multichannel around here...

All of the Elton John SACD's as well as Dark Side of the Moon...not much more Rock in my library

If you're a fan of Aimee Mann, Bachelor No. 2 is also well worth picking up. The MFSL SACDs of that and Lost in Space are out of print but there is still enough stock available through online retailers you can get them for a decent price before they start going for collector's prices.
