Hi
Firstly I ll tell you what are the devices that I am having.
I am using Pioneer BDP 150 BR/ SACD player. It has
1X Digital Coaxial Out 1X Stereo Out 1X HDMI Out NO Multi Channel Out
And also I am using a YAMAHA RXV361 AV receiver as my amplifier. It has
1X Coaxial In 1X Stereo In 1X Multi Channel In NO HDMI In
Also, it supports DTS 5.1, Dolby PL, Dolby PL II, PCM 2ch Stereo, PCM HiFi 5ch stereo & PCM 5ch Setero Music Enhancer.
And my connection here is Digital Coaxial. Sending as Bit Stream from SACD player.
My question is how do I connect these devices together to listen real 5 channel music out from my SACD (Sting- Scared Love) which recorded in 5ch? And what is the signal that AV receiver is going to receive from the SACD player? Do AV receivers have that capability of extract 5.1 channels from PCM signal via Coaxial input? I know it can do it with Dolby & DTS codecs. But no any idea about PCM.
Currently I have select 5ch Stereo Music Enhancer in PCM mode. I can hear the music from all 5 channels. But I don't know whether it has real surround effect or its in 2ch stereo for both front & rear channels.
Please advice. Thanks.

Player sends MCH out only from HDMI output.
Your receiver has no HDMI in.
Make your own conclusions...

Time for a new receiver. And no, you are not getting true multi-channel.

Thanks. Think I got my answer :) As a temporary solution, Is there any converter cables to buy? I have seen HDMI to stereo cables available in eBay. But I couldn't find HDMI to multi audio channel converter.

Buy a new Sony AVR only use HDMI for mch.

MCH receiver IS the "HDMI to multi audio channel converter".
HDMI signal is digital, it can not be turned into stereo or anything else analog without a DAC (digital to analog converter). Replacing the receiver is easier and cheaper than trying to make some sort of rube goldberg solution.
Either get a player with 5.1 analog output, or get a modern receiver with HDMI input. There is no other sensible way.

Not likely, Sony process better, sound better setup better, Audyssey is purely a waste of time gimmick,of course manual setup is best,
